The Post That Almost Didn’t Happen

More that later…

Last night Matt and I had another early morning run planned. We knew the it was going to rain today but he was convinced that it wouldn’t be that bad so we’d be able to run outside. When we woke up I was excited that the rain hadn’t started. I was even more excited when I looked at the weather and it was plus 8 already. I figured it was going to be a great morning to run. All I can say is weather network fail! They said it there was no wind chill and man were they wrong. It was freezing!

Putting that aside we actually had a great run. We did week 2, day 1 of C25K. This consisted of 1.5 min run then 2 min walk. We did is six times and ran/walked a little over 2km in 20 mins. Even though it was chilly it was a great way to start the morning.

After the run I had a glass of oj and 1/5 a bagel with some pb…

After work I had to run home to change and grab a few things before I picked up Matt so I grabbed a couple of spoonfuls of Coconut Liberte and a coconut kasha bar (I’m making my own Thursday – I’m getting tired of the pre-made ones).

When we got home I was tired and honestly a little cranky. It was a mentally exhausting day and I just wasn’t in the mood to cook. So my wonderful husband volunteered to go to subway to pick me us up subs for supper. He knew I wanted something healthy. Best.Husband.Ever.

I got a turkey sub on the cheesy bread. I haven’t had this bread in a while…so yummy!

I paired it was a glass of chocolate milk…

Dessert was coconut yogurt with a little extra unsweetened coconut added in along with granola and a spoonful of chocolate chips.

After dinner I sat down on the laptop to see if I could do a little work I needed to get done. One thing required filling out a form online and then printing it off. I spend about 30 mins filling out the form only to realize that I was on my laptop and I can’t actually print from here. I wouldn’t have to start all over again on the other computer. CRAP!

That just put me in a bad mood. I just didn’t want to do it again and really I just didn’t want to do anything (including blog) so I laid on the couch and took a nap. After I woke up I felt a little better but still wasn’t in the mood for blogging. I felt that my food just wasn’t all the interesting today so why bother. This is why I say “The Post that Almost Didn’t Happen”. After thinking about it for a few mins I realized that I actually might feel better after sitting down to write a blog post so here I am…finishing it up and I will say I do actually feel better. I’m really glad I wrote it.

So now I only have one more work day until my 5 day weekend. I took Thursday off to do some report cards but I think I might try to blog twice. I’m home alone why not?

Actually, I’m hoping to get in my ‘why I blog/my story’ post this weekend so that might be a great time to do it. Stay tuned….

Simple Eats

Today there’s not really that many interesting things to report. Very simple day.

I’m sad to admit I didn’t really eat breakfast this morning. I grabbed a cheese string on the way out of the house this morning but that was it.

Lunch was leftover pasta and yogurt and a kashi bar. For some reason I forgot to take a picture of my pasta but I remember to take a picture of my yogurt and bar – weird??

Dark Chocolate Coconut this time. Kashi bars are on sale at the Superstore so I picked up a couple of boxes for my supply.

While at the Superstore yesterday I picked up another Crofter’s Superfruit – North America (Blueberries and Cranberries). The hubby is now loving these too. No more regular jam for him anymore. This stuff is so yummy. I would definitely recommend it.

After work I had to stop by the grocery store again so I grabbed a Clif Bar. This is my first time trying them so I went with a simple, never fail kind – Chocolate Chip…

When you take it out of the package it is nothing like I was expecting (I wish I could have taken a picture after it was open but I was driving to I didn’t think that would be a good idea :P) but I must say it tasted much better then it looked. There a peanut butter chocolate is next on my list to try.

I actually only ate half the bar and saved the rest for Matt after I picked him up. He like it too.

Dinner was simple BBQ pork with baby potatoes and leftover salad from yesterday.

Just a reminder the salad was baby spinach, cucumbers, carrots, apple, dried cranberries and a drizzle of lemon juice. I know I said this yesterday but this salad was so good. Pork had some hickey smoked BBQ sauce and the baby potatoes had a little EVOO and some mixed spices. Overall, simple yet tasty.

After dinner I had five more mini eggs…

I had plans to hit up another yoga class with Jaime this week at Nubody’s. Before leaving I had 1 1/2 of the 7 grain crackers with some pb.

Before yoga we did a little cardio. Since today was suppose to be a rest day I didn’t want to do anything to intense so I just did 20 mins on the elliptical at a resistance of 7. I gave me a little sweat and I felt like I was working but nothing to aggravate my already sore muscles. Yoga was good tonight. We had a different instructor but overall I was impressed. I would definitely go to another one of her classes. Not bad for a free yoga class.

Now I’m going to toast 1/2 a bagel and top it with a little pb and superfruit and relax with the husband for the rest of the evening.

Only two more days left this week (I took a vacation day on Thursday). I hope everyone had a good Monday.

Just Breathe

I’m going to keep this post short and sweet since I’m looking forward to relaxing on the couch with my book.

Breakfast was toast and Superfruit…

Lunch was Subway. Six-inch turkey on Honey Oat. I was a spontaneous trip so I didn’t have my camera. You you all know what Subway looks like right?

I had a yoga session planned with Tash and Leslie so I wanted to grab a light snack first. At the grocery store today I picked up some of these.

I really enjoyed the crackers. I can see lots of different topping for them in my future.

Then it was time for yoga. We hit up a 90 min Moksha Yoga class. If you’ve never been it a hot yoga class where the first 45 mins is part of the standing series and the second half is part of the floor series. When you get out of class you feel like you just walked out of a pool. It’s really a great workout and a great stretch. After my weight workout yesterday I was feeling a little stiff and sore. Yoga was exactly what my body wanted. I’m hoping to hit up a couple of more yoga classes this week.

I brought the other 1/2 of my banana with me to eat after class.

Dinner was cheesy pasta and a salad.

I had another package of my cheesy pasta in the fridge I had to make so I figured after my sweaty yoga class this was a perfect time to make it.

Perfect Saturday Morning

Afternoon everyone! I hope you are all enjoying your Saturday.

I had such a great morning/early afternoon today I figured I’d write a blog post about it since I’m going out tonight and probably won’t blog when I get home.

Snow! WTF! Last weekend it was 18 degrees. This morning it was -10 with a windchill of –19. Gross.

I should tell you that I love sleeping in. Matt is always up before me and I just love to lay in bed on the weekend and relax. This morning was a little different. I was up with tons of energy and ready to get the day started by 8:50 this morning (that’s early for me on the weekends).

Yesterday I picked up that delicious Crofter’s Superfruit and this morning I knew I wanted to try some on my oats.

The problem is that I’ve actually only made oats once before and it was Chocolate Coconut Oats. Not just plain old oats so I needed some help. Twitter to the rescue. Lynn gave me this wonderful recipe.

In the pot: 1/3 cup of oats, 3/4 UVAB, 1 tsp of Vanilla Extract and 1 tbsp of ground flaxseed.

I burnt the first batch because I was writing an email and not paying attention so this was my second attempt.

She also suggested to add the Superfruit and pb to the top but I just decided to go with a splash of Almond Breeze and the Crofters. I devoured the whole thing. So good.

After I enjoyed a relaxing morning I heading out to pick up my jeans from the tailor (yes I have very short legs) and meet a couple of my friends for coffee. We hit up Second Cup and I got a medium non-fat vanilla bean latte. I find the coffee at Second Cup so much sweeter then Starbucks. I couldn’t even finish it.

Afterwards it was time to hit the gym. I did a five min warm up on the elliptical and then it was Gina’s Winter Shape Up Week 3. After looking the workout over I decided to do the advanced workout. I really liked all the compound exercises that she had incorporated into the workout. It is actually quite a short workout but it worked so many body parts I know I am going to feel the burn tomorrow. The only change I made to this week is I added three planks at the end of the workout.

Friday Food Issues

I took quite a few pictures today…enjoy :)

I’m so excited it’s Friday. I have been looking forward to the weekend so much more then usual this week. So I’m celebrating with a glass of wine (more on that later)…

I woke up this morning sore and stiff and knew it was my body’s way of telling me that I needed a rest day. I’m already feeling better and stoked for the gym tomorrow.

Random Breakfast – banana and cheese string. It was another busy morning so breakfast on the go again.

During the day more of the same snacks. Kashi bar and cheese string. I know I’ve had these a lot this week. I’m a creature of habit what can I say. I’ll try to mix it up a little more next week.

Honeybar Apple and Cinnamon. Lynn had a great giveaway a few weeks ago for some of these but this is the only one I could find that didn’t have peanuts so I pick it up (trying not to give in too much to my sweet craving). Overall, I quite enjoyed it. It was defiantly a nice change from my regular granola bar. My only complaint was that it was a little tough to chew. It made my jaw a little sore. My favourite part? The ingredients list. I know Lynn said this too. So few ingredients. I loved it.

Dinner was Sobey’s homemade pizza. Sounds pretty healthy right? Wrong! Greasy and dirty. I was so hungry I inhaled it before remembering to take pictures. I thought I’d have gotten use to this picture taking food thing but apparently not. Opps.

I just took a nice 30 min nap and now I’m enjoying a glass of this…

Fruit Cravings

How is everyone this evening. Tomorrow is Friday! Yippee!!

I’m really looking forward to the weekend although it isn’t suppose to be that warm but it’s still the weekend. Plus I’m thinking about taking a vacation day next Thursday so it will be a very short week next week and an extra long weekend.

So this morning was instant oatmeal (yes I said instant) but we were in a rush and and it was filling. I had the Quaker Cinnamon Weight Control Oatmeal with almond milk. It was ok, not nearly as good as real oatmeal but I just don’t have time for that during the week.

After some fuel Matt and I did day 2, week 1 of C25K. Same as Tuesday’s run – 1 min run, 1.5 min walk. We pushed ourselves really hard and I’m are very, very sore right now. The last day of week 1 is going to be on Saturday. It’s suppose to be –2 on Saturday so that should be interesting.

After we the run it was dinner time. I was craving something fruity really badly so we decided on a pineapple chicken salsa wrap with a side of broccoli and a fruit smoothie.

Started with a fruity smoothie. In the blender: one cup of frozen mixed berries and 1/2 a cup of oj. Straw for added tropical flavour.

In the wok: boneless skinless chicken breast, juice from strained pineapple, soy sauce, honey, fresh garlic.

Salsa consisted of pineapple, onion, brown sugar, lime juice and cilantro…
