Pedicures, Baby Showers and Road Trips

I hope everyone is enjoying their long weekend! I know I am.

So far the weekend has been super busy. Friday started with another green smoothie. This time I added some Amazing Grass green superfood. I love the extra greens in the morning.

It was beautiful on Friday so Matt and I decided to heat up the BBQ and make ground chicken burgers.

We paired it with some mini potatoes (garlic powder, onion salt, thyme, rosemary and basil).

Mine had a little cheese and some organic spinach.

Matt added some hot peppers, onion and a little light mayo to his.

Saturday I got up and decided to go for a quick pedicure before my busy day started. While there I decided to do something totally different and got blue toes!

Who would have ever thought? Ahhh…well…it was something different and I like them!

I am not pictureless for a while. For some reason I forgot to put my camera in my bag. Crap!

That afternoon was Angie’s baby shower. To throw Angie off the trail Lynn and I met her at the Public Gardens downtown first. We walked around a little then headed for some ice-cream. We sat around and chatted for about an hour. It’s been a while since I’ve seen the girls and it was great to catch up. It was also great to see Angie’s belly! She looks so cute!

Afterwards we headed over to Tash’s for the surprise baby shower. There we met up with Jaime, Leslie, Lex, Cat, Jen, and Marie along with a few other of Angie’s friends. It was a great time and I think we able to surprise Angie.

During the baby shower I snacked on some cheese, a cupcake and the most amazing looking cake. I so wish I had brought my camera with me to the shower. It was a great time and it was nice to meet some other bloggers from around the country.

After the shower I had to head home to pick up Matt since we were meeting a few friends for dinner at Moxie’s. Matt and I started with the Avocado Spring Rolls and for dinner I had the Seafood Linguine. It was great company and great food. I’d definitely go back again.

Sunday Matt and I decided to head to Mahone Bay for a road trip. I love day trips and it was beautiful, plus 23 and sunny out.

We grabbed lunch at a pub in Mahone Bay. I got the beef dip with sweet potato fries. Then a banana ice-cream for desert.  It was yummy but way too much food. I was so stuffed afterwards. By the time we got home I wasn’t feeling so good. Between dinner the night before and lunch on Sunday I was feeling a little sick. I knew something healthy was in order for dinner.

We got home around 4 and I curled up on the coach and read the Sookie Stackhouse novel for a couple of hours before dinner. On tonight’s menu was:

Scallop Skewers and Potatoes.

On the skewers: Organic baby tomatoes, red onion, red pepper, yellow pepper and scallops.

Matt had just headed out to turn on the BBQ when he remembered we were out of propane. So off we went to pick up propane before we could cook dinner. By the time we got back and cooked dinner it was after 8. It ended up being a late dinner but that was ok. Our lunch was huge and I still wasn’t very hungry.

I only ended up eating about 1/2 the potatoes but supper was yummy, healthy and delicious. It felt good to eat healthy again after two large meals of eating out.

Rockin’ the Weekend

So as you can probably tell from the title of the post I rocked my eating this weekend. Lots of healthy yummy meals.

Saturday started out with some scrambled eggs with some cheddar and a piece of oat bran toast.

Dinner was my sweet and sour meatballs. You can find the recipe here. I followed it exactly except I used red and yellow peppers instead of broccoli. I think it turned out better then the last time. The sauce was thicker and a little tastier. I’d definitely recommend it.

Sunday breakfast was similar to Saturdays. Scrambled eggs with cheddar, and piece of oat bran toast and hash browns (with pepper, thyme and cayenne – I must say I don’t think cayenne doesn’t sit will in my belly. I felt pretty yucky for about and hour or two after breakfast).

Lunch was a bagel sandwich with smoked turkey, organic spinach and mozza on a whole wheat bagel.

In the afternoon Matt and I went for a walk and I stopped at booster juice. I got a Citrus Swirl (oranges, strawberries, pineapple, bananas and yogurt) Nom!

Dinner I made lasagna. This is one of my favourite meals but I hardly ever make it. It’s a lot of work and very calorie dense if you eat too much of it.

While cooking dinner I also finished the rest of my POM Wonderful that I had been drinking. Mange Pomegranate to be exact.

My recipe comes from Better Homes New Cookbook. I got this as a wedding shower gift last year.

Ingredients:

  • 12 ounces of ground beef
  • 2 cloves of garlic
  • 1 can of pasta sauce (I use Ragu – you can also make the sauce from scratch but I wanted to make the quicker version)
  • 9 dried lasanga noodles
  • 1 egg
  • 1 container of low fat ricotta cheese (I use the Superstores blue menu kind – awesome nutritional info)
  • 1/4 cup of parmesan cheese
  • 1 1/2 cup of shredded mozza

First chop the garlic and a cook it up in a tbsp of olive oil, when it is cooked add the ground beef and cook it. When finished add the pasta sauce. During this time boil the water and add the noodles.

In a separate bowl beat the egg and add the ricotta and parmesan. Mix together.

Once all this is done start layering in the Pyrex dish. I start with a small amount of sauce then add three noodles.

Then a layer of the ricotta mix and a layer of mozza.

Continue for three layers and top the remaining amount of mozza and a little extra parmesan.

Cook at 375 for 40 mins.

For some reason this was left in the oven for about 5 mins too long but dinner was still great.

My evening snack was a huge bowl of fruit that I shared with the husband. In the bowl is grapes, banana, blueberries and pineapple.

Today I had an awesome snack when I got home from work of half a bagel with some white chocolate wonderful pb and 1/2 and banana.

Dinner started with a salad.

In the salad spinner: organic spinach, carrots, cucumbers, red peppers, yellow peppers and baby tomatoes.

After dinner I hit up yoga with Jaime. It was a much needed class and my body was craving the stretch and workout.
