Moving Day

Can you believe I forgot to take pictures of my empty apartment today? I’ve been trying so hard to stay on top of blogging the move and somehow I totally forgot. We’re going back in the morning so I can share them tomorrow.

I was a good food blogger today and did a good job getting back into the healthy eating even if it was moving day and taking lots of food pics.

So…back to the beginning. Matt and I got up super early (around 7) we wanted to make a coffee run before the movers showed up at 8:30.

We stopped at starbucks. I opted for a non-fat vanilla latte

I actually only ate about half in the morning. I’m not sure what was wrong but I just wasn’t feeling much like eating and my belly was bothering me.

By 9:00 the movers still weren’t here but we didn’t want to waste anytime so we decided to start cleaning. I had done quite a bit but we still had the kitchen left to do and the upstairs bathroom.

The movers finally arrived at 10. Yippee!!

We spend the entire morning cleaning the kitchen by lunch time I was finally famished! I had a slice of leftover pizza that was in the fridge and the second half of my banana loaf along with lots and lots of water.

After lunch we tackled the upstairs bathroom and just a few other little things that needed to be accomplished.

Our couch (the heaviest couch ever!!!) that we just couldn’t give away with some strange manikin that the hubby found by the garbage.

By 1:30 we were done, the movers were done and it was time to try to pack the car and see if we could fit everything in it that we wanted to take on our road trip. This was a very stressful 30 mins but after I worked my packing magic we got it all in (pictures to come).

Then we headed to my dad’s to drop off our stuff before running some errands.

Unfortunately, my step-mom is scared to death of cats so our kitty is spending the next two nights at our empty apartment by himself and we will go pick him up on Sunday for the drive. I know I might sound crazy but this makes me a little sad. I know he’ll be ok by himself but I just don’t want him to be lonely. I can’t wait to go see him in the morning.

Ok, back to my day. While our running errands we got hungry so we stopped at the grocery store for a quick snack. I grabbed hummus and flatbread snack along with a peach.

Salad – lettuce, red pepper, green pepper, cucumber, yellow beans, broccoli, celery, some real bacon (which was a treat since we never have real bacon at home) and mozza.

I loaded up on the salad. It’s been 3 days since I’ve had fresh veggies and I was craving some. After I finished my plate I started eating the salad right out of the salad bowl – I need to get lots of veggies in before we hit the road.

During the evening I might have enjoyed a few glasses of this as well.

One thing I can say is that my dad’s place is beautiful. I love being here. It’s so calm and relaxing.

Pedicures, Baby Showers and Road Trips

I hope everyone is enjoying their long weekend! I know I am.

So far the weekend has been super busy. Friday started with another green smoothie. This time I added some Amazing Grass green superfood. I love the extra greens in the morning.

It was beautiful on Friday so Matt and I decided to heat up the BBQ and make ground chicken burgers.

We paired it with some mini potatoes (garlic powder, onion salt, thyme, rosemary and basil).

Mine had a little cheese and some organic spinach.

Matt added some hot peppers, onion and a little light mayo to his.

Saturday I got up and decided to go for a quick pedicure before my busy day started. While there I decided to do something totally different and got blue toes!

Who would have ever thought? Ahhh…well…it was something different and I like them!

I am not pictureless for a while. For some reason I forgot to put my camera in my bag. Crap!

That afternoon was Angie’s baby shower. To throw Angie off the trail Lynn and I met her at the Public Gardens downtown first. We walked around a little then headed for some ice-cream. We sat around and chatted for about an hour. It’s been a while since I’ve seen the girls and it was great to catch up. It was also great to see Angie’s belly! She looks so cute!

Afterwards we headed over to Tash’s for the surprise baby shower. There we met up with Jaime, Leslie, Lex, Cat, Jen, and Marie along with a few other of Angie’s friends. It was a great time and I think we able to surprise Angie.

During the baby shower I snacked on some cheese, a cupcake and the most amazing looking cake. I so wish I had brought my camera with me to the shower. It was a great time and it was nice to meet some other bloggers from around the country.

After the shower I had to head home to pick up Matt since we were meeting a few friends for dinner at Moxie’s. Matt and I started with the Avocado Spring Rolls and for dinner I had the Seafood Linguine. It was great company and great food. I’d definitely go back again.

Sunday Matt and I decided to head to Mahone Bay for a road trip. I love day trips and it was beautiful, plus 23 and sunny out.

We grabbed lunch at a pub in Mahone Bay. I got the beef dip with sweet potato fries. Then a banana ice-cream for desert.  It was yummy but way too much food. I was so stuffed afterwards. By the time we got home I wasn’t feeling so good. Between dinner the night before and lunch on Sunday I was feeling a little sick. I knew something healthy was in order for dinner.

We got home around 4 and I curled up on the coach and read the Sookie Stackhouse novel for a couple of hours before dinner. On tonight’s menu was:

Scallop Skewers and Potatoes.

On the skewers: Organic baby tomatoes, red onion, red pepper, yellow pepper and scallops.

Matt had just headed out to turn on the BBQ when he remembered we were out of propane. So off we went to pick up propane before we could cook dinner. By the time we got back and cooked dinner it was after 8. It ended up being a late dinner but that was ok. Our lunch was huge and I still wasn’t very hungry.

I only ended up eating about 1/2 the potatoes but supper was yummy, healthy and delicious. It felt good to eat healthy again after two large meals of eating out.

Smoothie Obsession

I hope everyone caught my post this morning – Link Love. Heather had a great post the other day and I hope you all get a chance to read it.

Today I had another awesome day of eats.

Breakfast was a green smoothie. I’m in love with smoothies in the morning. They give me so much energy and I think there such a great way to start the day. In today’s blender: 2 handfuls of organic spinach, 1 banana, 2 tbsp of flax meal, 1 cup of UVAB and ice.

Lunch was a small piece of leftover lasagna.

On my way home I had to make a stop at Planet Organic and picked up a couple of things including an organic mango, organic cilantro, light coconut milk and…

I’ve been eyeing this stuff for a while so I decided to pick up a sample pack to give it a try. I can’t wait to try some in my smoothie in the morning.

Passion Fruit Smoothie Blend including bananas, peaches, passion fruit, apple, and orange juice.

Dinner was something different. We had some some tilapia in the fridge and we decided to make some tilapia burgers. We decided to top it with some mango pineapple salsa.

The salsa started with cut up pieces of mango and pineapple.

Added 2 tbsp of fresh cilantro…

Then mixed in 1 tbsp of brown sugar, 2 tbsp of lime juice, 1 tbsp of lemon juice.

Yummy, healthy and delicious. It was something different and both Matt and I really enjoyed it. I’ll definitely be trying this one again.

I guess I was in a smoothie mood because after dinner I wanted to use my coconut milk and I had remembered seeing a Tropical Avocado Smoothie on Jessica’s blog a while back. I didn’t have any avocado so I subbed the avocado for pineapple. Other then that I followed the recipe exactly.

Tropical Pineapple Smoothie

  • 1/2 cup of pineapple
  • 1/2 a banana
  • 1/2 cup of light coconut milk
  • 1/2 cup of UVAB
  • 1/4 cup of plain greek yogurt
  • 3 ice cubes
  • 1/2 tsp of vanilla extract
  • 1 tbsp coconut

Top with another tbsp of coconut and banana.

And served in a wine glass to make it look pretty.
