Is everyone else looking forward to tomorrow as much as I am? It’s been a long week for me and I’m looking forward to doing something besides packing.
I have two days of eats, a yummy muffin recipe and some pretty pictures to catch you all up on so I’d better get down to business.
Since there’s been quite a bit of food consumed over the past two days I’ll let the pictures tell the story.

As you may be able to tell my food has not really been very exciting. There’s been lots of repeat food but that’s really because I’m just trying to eat whatever we have in the house without going to the grocery store since we’re moving in a week.
If you follow me on twitter you might have noticed my tweets yesterday about baking some yummy muffins. I promised a few people that I would blog the recipe so here it is.
Cinnamon Muffins (adapted from The Hazel Bloom)
- 2 cups of whole wheat flour
- 1 tbsp baking power
- 1 and 1/2 tsp cinnamon
- 2 eggs
- 1 c almond milk
- 2/3 brown sugar
- 6 tbsp olive oil becel
- 1 tsp vanilla
Topping
- 1/4 brown sugar
- 1 tsp cinnamon
Pre-heat oven to 400. Grease muffin pan.
Mix together flour, baking power and cinnamon. Melt becel then mix in eggs, milk, brown sugar and vanilla. Add wet ingredients to dry ingredients.
Don’t over mix.
Scoop into muffin pan.
Top each muffin with brown sugar and cinnamon mixture.
Bake for 12-15 mins (for muffins) and 10-12 mins (for mini muffins)
I made 12 muffins and 8 mini muffins.
I popped one of the mini muffins in my mouth right away!
They’re good by themselves or with a little butter.
This afternoon I decided to get out of the house for a little while and take a break from packing.
The house I lived in when I was 3.
I’m going to miss all the trees in NS.
I did realize one thing when I was on my walk. I have an unnatural fear of bees! I’m scared to death of them. I’m not sure why, I haven’t been stung by a bee since I was 13 but I’m still scared to death! If I see a bee I run!
Does anyone else have an unnatural fear? I’d love to hear about them.

I'm afraid of spiders. Ick ick ick.
For me it is snakes. My grandmother has a fear of them and I seem to have inherited it from her.

I have a deathly fear of mice, which I didn't realize until one snuck under the front door of my old apartment. I felt like I was having a heart attack. So silly!
I really don't like birthday cake candles. I won't go screaming out of the room but they just make me uncomfortable for some reason... Strange I know lol
Thanks for posting your lasagna recipe! I have been wanting to try making some for a while but there are so many recipes out there it is hard to pick one.
