Reality TV Wednesday

I’m feeling a little stir crazy today so I’m going to keep this post nice and short before I jump in the shower then prepare dinner.

Last night dinner didn’t turn out nearly as good as I predicted it was going to to. I decided to make some coconut shrimp. I have been telling the hubby that I was going to make this for a couple of weeks now but didn’t get around to in until last night.

I first started my placing some unsweetened coconut on a baking sheet

Then I toasted it in the oven for about 5 mins at 425.

I then added it to a bowl with equal parts coconut and whole wheat bread crumbs.

I then placed some asparagus on a baking sheet with a little EVOO, salt and ground pepper and roasted it in the oven for 20 mins.

While the asparagus was cooking I took some uncooked shrimp and first dipped them in some egg whites.

Then dipped them in the coconut mixture.

Finally I placed them on a another baking sheet.

I cooked them in the oven with the asparagus for the last 10 mins flipping once.

I served with the asparagus and some brown rice.

The shrimp was just a little too sweet. I really needed some spices to give it a little kick.

After dinner included a little too much snacking, it started out ok, a sugar free popsicle but then I ended up finishing the last cinnamon roll and finally a couple of slices of bread with some butter on one and some chocolate pb on the other. I definitely didn’t need the bread. It was most like mindless eating then anything else.

This morning I got up with no idea what I was going to have for breakfast. I was looking over some of my must try posts from fellow bloggers when something jumped out at me. A chocolate banana omelette by Heather. I knew it was a must try. You can see her recipe here. I followed it exactly.

After breakfast I spent the morning/afternoon applying for a couple of other jobs, doing some cleaning and laundry and a little blog reading.

A some point in the last afternoon I realized I should eat something for lunch. I wasn’t sure what to have and my creative juices weren’t flowing so I threw together a sandwich.

Turkey, spinach, mozza, and 1/2 an apple in a pita.

I actually should have left it on a little longer. Not quite hot enough.

I’m now going to quickly jump in the shower before the hubby gets home from work and then start dinner.

Is anyone else excited that the new fall season is starting soon? Survivor start tonight! I actually watched Survivor for a while in the first few seasons then stopped watching. They hubby and I started again last season for the Heroes Vs. Villains and we really enjoyed it so we’re going to watch this season too (hopefully it’s good). Wednesday seems to be the night of good reality tv, it’s also the finale of Big Brother! I’m addicted to that show!!!

Today’s Questions: Are you going to watch Survivor? And part 2: do you love Big Brother? If so who do you think is going to win? I’m going to say Haden. He’s won a lot of competitions and everyone likes him.

O Canada

In honor of Canada Day I thought I’d share a yummy Shrimp recipe that I made last night for dinner.

Spicy Orange Shrimp that I got off Closet Cooking. You can check out the original recipe here.

This recipe took a lot of pre (it took me about 45 mins to get everything ready) but it was definitely worth it in the end.

Spicy Orange Shrimp

  • EVOO
  • 1 bag of shrimp
  • 1 tbsp grated garlic
  • 1 tbsp grated ginger
  • 1 orange (juice and zest)
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tbsp chilli sauce (I used a sweet chilli sauce)
  • handful of chopped cilantro
  • Noodles or Rice (we used rice noodles)

Peel Shrimp (or buy the pre-peeled stuff)

In one bowl mix together soy sauce, rice vinegar, chilli sauce.

Juice and zest orange. Place in separate bowl.

Grate garlic and ginger, chop cilantro.

In a wok heat oil and cook shrimp until pink. Set aside.

Cook the ginger and garlic for about 1 min then add the orange mixture and the soy sauce mixture. Heat for 3-5 mins until it thickens to a sauce.

Add shrimp and cilantro.

Follow the directions for the noodles on the box then add them to the mixture.

Pasta Revolution

Happy day before the long weekend! How many others are as excited as I am? I’m so excited for the weekend. It’s a long weekend and the weather in Halifax is calling for 20 degrees and sunny. Who could as for a better weekend.

I think I’ll be starting my day with a smoothie for the rest of the school year. I’ve had so much more energy the past couple days.

So how many people out there watched Jamie Oliver’s Food Revolution? Matt and watched it every week and really started to love it.

I loved the idea that Jamie had to changed the school system and the food that our kids eat. We also loved the idea of eating real food and we’ve been trying to work on that. That includes pasta sauce from scratch not from a bottle.

Tonight we finally decided to try our first Jamie Oliver recipe. Matt decided to cook me Jamie’s Classic Tomato Spaghetti.

He followed the recipe exactly but here’s a quick breakdown of our dinner.

Jamie Oliver’s Classic Tomato Spaghetti

Ingredients:

  • 2 cloves of garlic
  • 1 red chile
  • A small bunch of basil
  • Box of Spaghetti
  • 1 large can of diced tomato
  • Olive Oil
  • Parmesan Cheese
  • Bag of frozen shrimp (this one we added on our own)

Matt first sliced the garlic and chile and took the basil leaves off the stem and cut up the stems.

He boiled pasta and and in a pan heat up 2 tbsp of olive and cook up the garlic, chile and stems of the basil. When the garlic starts to brown add the tomatoes and the basil.

In a separate bowl cook the shrimp.

Once the pasta is cooked, drain and mix into the tomato sauce.

Then add the shrimp.

Serve on a plate topped with some parmesan.

Served with a piece of Oatmeal brown bread that we picked up at Pete’s this afternoon.

Dinner was simple, healthy and delicious. NOM!

This recipe made 6-7 servings so lots of leftovers.

And after dinner treat included 2 or 3 of these that we also got a Pete’s.

Overall, another great day of eating.

Is There Such a Thing at as Too Spicy?

OMG…YES!!!

So I haven’t been around much. The past two days have been busy and I haven’t got too much done. Haven’t been to the gym, yoga or really been eating too healthy. Overall, not a really good couple of days.

Haven’t had my camera on me either so it hasn’t been great overall.

Other then that, yesterday when I picked up Matt from work he hadn’t had the best day and really just wanted to go out, sit down and talk. I agreed and we ended up at Your Father’s Moustache downtown. Since I had been craving Fish and Chips for a few days now I figured this would be a great time to get them. I will say now, I love the Moustache’s wings and some of their other food but their fish and chips were nothing but grease. I must say I just wasn’t impressed. I would definitely not order them again.

I woke up this morning with great plans to get another run in this morning, healthy eating today and yoga tonight. The healthy eating went ok but exercise not so much.

I set the alarm this morning to get up to run and after I woke up I realized that my gym clothes were in the washing machine soaking wet!!! CRAP!!!! So no run for me :(

My eating went pretty well. Breakfast – Greek yogurt, granola and dried cranberries. Lunch – random: apple, pb, carrots, kashi bar and yogurt cup.

Dinner tonight was going to be Jaime’s Coconut Shrimp. I had ever intention of following the recipe except use EVOO instead of Coconut Oil and I didn’t want to use the flour. As I was getting the ingredients out I didn’t have any paprika – I swear I thought I had some. This was the first of my many problems tonight. I subbed the paprika for red pepper flakes and continued on.

I started mixing everything up and since Jaime didn’t put down how much paprika and cayenne she used I figured 2 tsps were enough of each for 3 people. I also used two eggs not egg whites – mostly because I such at separating eggs and I got the yoke in the bowl as well so I just figured I’d go with it. 

Then the husband got involved with the cooking. He got me to coat the shrimp while he cooked them. He decided that he should just stir fry them in the wok so he just poured them all in and started mixing them around. While doing them the coconut mixture started to fall off. I’m not sure if it’s because the lack on the flour or the fact that he was mixing them up or a bit of both but most of the mixture fell off during the cooking process. I figured – no big deal just serve on top and should still be good.

Served dinner with roasted asparagus and some brown rice…

Looked pretty good right, wrong? Way too SPICY!

I was actually only able to eat about 6 of my 9 shrimp. Way too much cayenne. I guess I need to learn a little more about how much spice should go in a meal. Practice makes perfect right?. I’m not going to say dinner was a complete fail but it definitely didn’t go as planned.

Since dinner took a while I missed yoga tonight as well. I missed yoga on Monday too. Apparently, I’m not a very good yoga buddy to Jaime. I’m hoping to hit up a class on Saturday so I can keep up my goal of getting to at least one yoga class a week.

I do have some good new to leave you with. One of my best friends in the whole world is coming home for a week and a half tomorrow. She lives in Connecticut and I only see her once or twice a year. I’m so excited and she made my day yesterday when she told me.
