Smoothie Obsession

I hope everyone caught my post this morning – Link Love. Heather had a great post the other day and I hope you all get a chance to read it.

Today I had another awesome day of eats.

Breakfast was a green smoothie. I’m in love with smoothies in the morning. They give me so much energy and I think there such a great way to start the day. In today’s blender: 2 handfuls of organic spinach, 1 banana, 2 tbsp of flax meal, 1 cup of UVAB and ice.

Lunch was a small piece of leftover lasagna.

On my way home I had to make a stop at Planet Organic and picked up a couple of things including an organic mango, organic cilantro, light coconut milk and…

I’ve been eyeing this stuff for a while so I decided to pick up a sample pack to give it a try. I can’t wait to try some in my smoothie in the morning.

Passion Fruit Smoothie Blend including bananas, peaches, passion fruit, apple, and orange juice.

Dinner was something different. We had some some tilapia in the fridge and we decided to make some tilapia burgers. We decided to top it with some mango pineapple salsa.

The salsa started with cut up pieces of mango and pineapple.

Added 2 tbsp of fresh cilantro…

Then mixed in 1 tbsp of brown sugar, 2 tbsp of lime juice, 1 tbsp of lemon juice.

Dinner was BBQ tilapia on a bun…

Yummy, healthy and delicious. It was something different and both Matt and I really enjoyed it. I’ll definitely be trying this one again.

I guess I was in a smoothie mood because after dinner I wanted to use my coconut milk and I had remembered seeing a Tropical Avocado Smoothie on Jessica’s blog a while back. I didn’t have any avocado so I subbed the avocado for pineapple. Other then that I followed the recipe exactly.

Tropical Pineapple Smoothie

  • 1/2 cup of pineapple
  • 1/2 a banana
  • 1/2 cup of light coconut milk
  • 1/2 cup of UVAB
  • 1/4 cup of plain greek yogurt
  • 3 ice cubes
  • 1/2 tsp of vanilla extract
  • 1 tbsp coconut

Top with another tbsp of coconut and banana.

And served in a wine glass to make it look pretty.

Another wonderful smoothie! I think I’m obessed.
