Coconut Cream Sweetness

Happy Saturday Everyone!

I’ve been looking forward to the weekend since about Monday. When we are this close to the end of the school year (9 teaching days left) I get very distracted.

When I got home from work yesterday is was beautiful, sunny and hot. I convinced Matt to go for a walk with me and we ended up picking up quite a few things. Our first stop was the drug store.

If you remember from Thursday Evening’s post I burnt my hand. Well after my blog post that night my burn started to blister so we did some research and talked to the pharmacist and he recommended that I cover it for a while (up to 2 weeks). Back to yesterday we needed new tape for the dressing so we went to pick some up.

Afterwards we walked to blockbuster and ended up renting:

We then headed to the grocery store to pick up a few things including dinner. Our final stop was the bakery.

I chose for dinner a BLT salad…

I put the salad in a big bowl, took the chicken out and heated it a little and was left with an amazing salad.

NOM! Such a great dinner. I think you’ll be seeing a lot of chicken salads this summer.

After dinner I wanted a little something else so I had vanilla greek yogurt with a heated chocolate vitamuffin top and some mixed berries…

First we spend some time watching the second season of Californication.

Does anyone else watch that show? I’m still torn on it. They husband loves it but I’m not sure how I feel about it.

Then it was time to watch Alice. I hadn’t seen it yet and was excited to.

What did you think of Alice in Wonderland? I enjoyed it. Johnny Depp did a great job, I loved the visual aspects of the movie and I adore Helena Bonham Carter. I know Anne Hathaway’s character was suppose to be weird but she really got on my nerves.

Before starting the movie we figured it was time to break open the beautiful dessert we picked up at the bakery.

There was so much cream on that thing. It was delicious but soooo rich. After both having a piece last night we still have 3/4 of the pie left and I don’t think I’m going to be able to eat another piece. One piece was perfect.

I wont be back tonight with another post since it is my friends 30th birthday tonight but I’ll post again tomorrow with a re-cap of my weekend.

Sizzlin’ in the Sun

Happy Saturday Everyone. It’s the last weekend in May and Matt and I decided to chill and do nothing this weekend. We have lots going throughout the weekends in June so we figured we relax and not really make too many plans.

I got up around 9:30 and was craving pancakes so I grabbed the organic pancake mix I had in the cupboard and started mixing.

I mixed the mix with one egg and some skim milk (since I’m currently out of Almond Milk – I must pick some up tomorrow) and a splash of water.

Matt was having eggs so I just made three pancakes for myself.

I topped them with fresh strawberries and some maple syrup.

Perfect Saturday morning breakfast.

After breakfast Matt and I headed out to run some errands and get some groceries. We were going to hand to the gym after lunch. On our way to the grocery store we decided to skip the gym and go for a long walk on the waterfront since it was +22 out.

We walked for a while when we decided to grab some lunch. We stopped at Hart & Thistle right on the water and sat outside on the patio and enjoyed some lunch. We both got fish and chips but I got mine with sweet potato fries. The food there was great. I’d definitely recommend it.

While we were sitting there I realized that I had a strapless shirt on and no sunscreen. I could feel myself getting burnt.

OH CRAP!

I was a lobster by the time we got home.

After I finished writing this post I’m going to go have a cold shower then get Matt to rub some aloe on it. I need to remember my sunscreen when I’m going out.

After we got home from the walk we played Mario on the Wii for a while – had a couple of beers (well Matt had beer I had some Mike’s that were in the fridge). We must be careful Mario Wii could cause a divorce – I’m kidding but seriously that game is very stressful :P

Dinner we decided to make a homemade pizza.

We picked up a thin crust at the superstore today and added some low cal pizza sauce.

Matt put some green pepper and red onion on his side of the pizza (if you’ve read my blog before you know that I just don’t like veggies on my pizza).

I’m currently blogging while the hockey game is on so I’d better say Go Hawks Go for the hubby – he is a huge Hawks fan – And they just scored.

Falling Behind

Sorry for the lack of posting over the weekend. It was crazy busy.

My weekend looked like this:

Saturday

Matt and I slept in a bit and then got up early and went for a late brunch at Cora’s. I decided to go with the fruit plate with a side of brie and a piece of whole wheat toast and pb.

We then spent the next 4-6 hours walking around and stopping at a couple of shops. Since it was sunny and warm out we spent most of the day outside walking. I am still sore from it today.

While I didn’t pick up much shopping I did find this new tea store in the mall. David’s Tea. And picked up a couple of things.

Since brunch was late we grabbed an early dinner at the Chickenburger in Bedford. I love this place. I hardly ever make it out there but it is always worth it. I usually skip the side orders and get both a chicken burger and a hamburger since they are small and I can never decide on which one I like better.

Its funny I had my camera with my all day an didn’t take a single picture.

We then headed home to watch Avatar for the first time and relax. I really didn’t have high expectations for Avatar. I’m not sure why but we just never made it to the theatre to see it so Matt decided to buy a copy on Saturday and we curled up on the couch to watch it. I actually enjoyed it a lot more then I thought I would. I’ll definitely have to watch it again to get a full grasp on the movie.

Sunday

Sunday was also pretty busy. Since we skipped grocery day on Saturday we had to make a trip to both Costco and Superstore.

Sunday started out with Oats in a Jar – Chocoloate Peanut Butter Oats to be exact. I can see why everyone raves about this. NOM!

I actually only ate half the ribs on my plate. They were huge and I could hardly finish them.

Today

Breakfast was vanilla greek yogurt, granola and 1/2 a banana. I will have to agree with Jaime on this one. The vanilla greek yogurt is good but I’m not sure it’s worth the price. I’m not sure it’s THAT much better then the plain. I’d love to try some other flavours though (too bad we don’t get any here in Canada).

Lunch was left over Annie’s Mac and Cheese, a yogurt cup and a Cherry Dark Chocolate Kashi bar.

I stopped at the grocery store on my way home and picked up a package of these:

Perfect Saturday Morning

Afternoon everyone! I hope you are all enjoying your Saturday.

I had such a great morning/early afternoon today I figured I’d write a blog post about it since I’m going out tonight and probably won’t blog when I get home.

Snow! WTF! Last weekend it was 18 degrees. This morning it was -10 with a windchill of –19. Gross.

I should tell you that I love sleeping in. Matt is always up before me and I just love to lay in bed on the weekend and relax. This morning was a little different. I was up with tons of energy and ready to get the day started by 8:50 this morning (that’s early for me on the weekends).

Yesterday I picked up that delicious Crofter’s Superfruit and this morning I knew I wanted to try some on my oats.

The problem is that I’ve actually only made oats once before and it was Chocolate Coconut Oats. Not just plain old oats so I needed some help. Twitter to the rescue. Lynn gave me this wonderful recipe.

In the pot: 1/3 cup of oats, 3/4 UVAB, 1 tsp of Vanilla Extract and 1 tbsp of ground flaxseed.

I burnt the first batch because I was writing an email and not paying attention so this was my second attempt.

She also suggested to add the Superfruit and pb to the top but I just decided to go with a splash of Almond Breeze and the Crofters. I devoured the whole thing. So good.

After I enjoyed a relaxing morning I heading out to pick up my jeans from the tailor (yes I have very short legs) and meet a couple of my friends for coffee. We hit up Second Cup and I got a medium non-fat vanilla bean latte. I find the coffee at Second Cup so much sweeter then Starbucks. I couldn’t even finish it.

Afterwards it was time to hit the gym. I did a five min warm up on the elliptical and then it was Gina’s Winter Shape Up Week 3. After looking the workout over I decided to do the advanced workout. I really liked all the compound exercises that she had incorporated into the workout. It is actually quite a short workout but it worked so many body parts I know I am going to feel the burn tomorrow. The only change I made to this week is I added three planks at the end of the workout.

Tonight I’m meeting my sister’s boyfriend for the first time. We are going out for Thai. Should be an interesting experience.
