Simple and Healthy Eats

Evening All!

This morning started bright and early at 5:15. When I got to the gym I did a 5 min run on the treadmill to warm-up then started Gina’s Summer Shape Up Week 1. Her workout’s are different this time. Instead of just strength training she included a combination of strength, flexibility and speed training. I’m going to follow it as much as possible as long as it fits into my workout schedule.

Today was strength training. I did the following workout in circuit-style (one of each exercise right after another with a 1-2 min rest at the end of each set and then repeat 3 times). Here’s a breakdown of my workout this morning:

Bend-Over Fly 15lbs 12 reps
Side Lying Lateral Raise 5lbs 12 reps per side
Ultimate Toe Touch 10 reps per side
Incline Bicep Curl (on Stability Ball) 15lbs 12 reps
Bend-Over Row 15lbs 12 reps
Reverse Crunch 15 reps
Stability Ball Back Extension 15 reps
Weighted Ball Crunch 10lbs 12 reps
Plie Squats 20lbs 15 reps
Chest Press on Stability Ball 20 lbs 12 reps

Overall it was a pretty good workout. Not my favourite but I got a great sweat in and felt pretty good afterwards. I did find the workout took a little longer then usual since I’m not use to some of the exercises. As well, I think I might need to push myself a little more with some of the weights. I will be doing this workout again on Friday so I’ll give it another try and let you all know how it goes then.

After my workout breakfast was a piece of flax toast and a protein green smoothie. In the blender: 2 large handfuls of organic spinach, 1 organic banana, 1 tbsp of flaxmeal, 1 scoop of lean whey and 1 cup of UVAB. Another great combo.

Lunch was a turkey sammie on an English muffin. Sliced turkey, mozza, spinach all on a whole wheat English muffin along with a yogurt cup and baby carrots.

After work I met a friend for a coffee date at Starbucks. I had skinny cinnamon dolce latte…

Roasted baby potatoes with thyme, rosemary, oregano and a little parmesan cheese. I read this combo on someone's blog on the weekend. I have not idea who’s it was so if I got the idea from you please let me know. I’d love to give you credit for it.

Easy. Healthy. Yummy. I actually only ate two pieces of the chicken but all the potatoes and asparagus. The picture doesn’t give credit to how much asparagus was actually on my plate and how big the asparagus actually was. So filling.

Dessert was Skinny Cow Ice-Cream Sandwich. What a great sweet treat for only 130 calories.

Pedicures, Baby Showers and Road Trips

I hope everyone is enjoying their long weekend! I know I am.

So far the weekend has been super busy. Friday started with another green smoothie. This time I added some Amazing Grass green superfood. I love the extra greens in the morning.

It was beautiful on Friday so Matt and I decided to heat up the BBQ and make ground chicken burgers.

We paired it with some mini potatoes (garlic powder, onion salt, thyme, rosemary and basil).

Saturday I got up and decided to go for a quick pedicure before my busy day started. While there I decided to do something totally different and got blue toes!

Who would have ever thought? Ahhh…well…it was something different and I like them!

I am not pictureless for a while. For some reason I forgot to put my camera in my bag. Crap!

That afternoon was Angie’s baby shower. To throw Angie off the trail Lynn and I met her at the Public Gardens downtown first. We walked around a little then headed for some ice-cream. We sat around and chatted for about an hour. It’s been a while since I’ve seen the girls and it was great to catch up. It was also great to see Angie’s belly! She looks so cute!

Afterwards we headed over to Tash’s for the surprise baby shower. There we met up with Jaime, Leslie, Lex, Cat, Jen, and Marie along with a few other of Angie’s friends. It was a great time and I think we able to surprise Angie.

During the baby shower I snacked on some cheese, a cupcake and the most amazing looking cake. I so wish I had brought my camera with me to the shower. It was a great time and it was nice to meet some other bloggers from around the country.

After the shower I had to head home to pick up Matt since we were meeting a few friends for dinner at Moxie’s. Matt and I started with the Avocado Spring Rolls and for dinner I had the Seafood Linguine. It was great company and great food. I’d definitely go back again.

Sunday Matt and I decided to head to Mahone Bay for a road trip. I love day trips and it was beautiful, plus 23 and sunny out.

We grabbed lunch at a pub in Mahone Bay. I got the beef dip with sweet potato fries. Then a banana ice-cream for desert.  It was yummy but way too much food. I was so stuffed afterwards. By the time we got home I wasn’t feeling so good. Between dinner the night before and lunch on Sunday I was feeling a little sick. I knew something healthy was in order for dinner.

We got home around 4 and I curled up on the coach and read the Sookie Stackhouse novel for a couple of hours before dinner. On tonight’s menu was:

Scallop Skewers and Potatoes.

On the skewers: Organic baby tomatoes, red onion, red pepper, yellow pepper and scallops.

Matt had just headed out to turn on the BBQ when he remembered we were out of propane. So off we went to pick up propane before we could cook dinner. By the time we got back and cooked dinner it was after 8. It ended up being a late dinner but that was ok. Our lunch was huge and I still wasn’t very hungry.

I only ended up eating about 1/2 the potatoes but supper was yummy, healthy and delicious. It felt good to eat healthy again after two large meals of eating out.

Falling Behind

Sorry for the lack of posting over the weekend. It was crazy busy.

My weekend looked like this:

Saturday

Matt and I slept in a bit and then got up early and went for a late brunch at Cora’s. I decided to go with the fruit plate with a side of brie and a piece of whole wheat toast and pb.

We then spent the next 4-6 hours walking around and stopping at a couple of shops. Since it was sunny and warm out we spent most of the day outside walking. I am still sore from it today.

While I didn’t pick up much shopping I did find this new tea store in the mall. David’s Tea. And picked up a couple of things.

Since brunch was late we grabbed an early dinner at the Chickenburger in Bedford. I love this place. I hardly ever make it out there but it is always worth it. I usually skip the side orders and get both a chicken burger and a hamburger since they are small and I can never decide on which one I like better.

Its funny I had my camera with my all day an didn’t take a single picture.

We then headed home to watch Avatar for the first time and relax. I really didn’t have high expectations for Avatar. I’m not sure why but we just never made it to the theatre to see it so Matt decided to buy a copy on Saturday and we curled up on the couch to watch it. I actually enjoyed it a lot more then I thought I would. I’ll definitely have to watch it again to get a full grasp on the movie.

Sunday

Sunday was also pretty busy. Since we skipped grocery day on Saturday we had to make a trip to both Costco and Superstore.

Sunday started out with Oats in a Jar – Chocoloate Peanut Butter Oats to be exact. I can see why everyone raves about this. NOM!

I actually only ate half the ribs on my plate. They were huge and I could hardly finish them.

Today

Breakfast was vanilla greek yogurt, granola and 1/2 a banana. I will have to agree with Jaime on this one. The vanilla greek yogurt is good but I’m not sure it’s worth the price. I’m not sure it’s THAT much better then the plain. I’d love to try some other flavours though (too bad we don’t get any here in Canada).

Lunch was left over Annie’s Mac and Cheese, a yogurt cup and a Cherry Dark Chocolate Kashi bar.

I stopped at the grocery store on my way home and picked up a package of these:

Simple Eats

Today there’s not really that many interesting things to report. Very simple day.

I’m sad to admit I didn’t really eat breakfast this morning. I grabbed a cheese string on the way out of the house this morning but that was it.

My morning snack consisted of a banana and cheese string…

Lunch was leftover pasta and yogurt and a kashi bar. For some reason I forgot to take a picture of my pasta but I remember to take a picture of my yogurt and bar – weird??

Dark Chocolate Coconut this time. Kashi bars are on sale at the Superstore so I picked up a couple of boxes for my supply.

While at the Superstore yesterday I picked up another Crofter’s Superfruit – North America (Blueberries and Cranberries). The hubby is now loving these too. No more regular jam for him anymore. This stuff is so yummy. I would definitely recommend it.

After work I had to stop by the grocery store again so I grabbed a Clif Bar. This is my first time trying them so I went with a simple, never fail kind – Chocolate Chip…

When you take it out of the package it is nothing like I was expecting (I wish I could have taken a picture after it was open but I was driving to I didn’t think that would be a good idea :P) but I must say it tasted much better then it looked. There a peanut butter chocolate is next on my list to try.

I actually only ate half the bar and saved the rest for Matt after I picked him up. He like it too.

Dinner was simple BBQ pork with baby potatoes and leftover salad from yesterday.

Just a reminder the salad was baby spinach, cucumbers, carrots, apple, dried cranberries and a drizzle of lemon juice. I know I said this yesterday but this salad was so good. Pork had some hickey smoked BBQ sauce and the baby potatoes had a little EVOO and some mixed spices. Overall, simple yet tasty.

After dinner I had five more mini eggs…

I had plans to hit up another yoga class with Jaime this week at Nubody’s. Before leaving I had 1 1/2 of the 7 grain crackers with some pb.

Before yoga we did a little cardio. Since today was suppose to be a rest day I didn’t want to do anything to intense so I just did 20 mins on the elliptical at a resistance of 7. I gave me a little sweat and I felt like I was working but nothing to aggravate my already sore muscles. Yoga was good tonight. We had a different instructor but overall I was impressed. I would definitely go to another one of her classes. Not bad for a free yoga class.

Now I’m going to toast 1/2 a bagel and top it with a little pb and superfruit and relax with the husband for the rest of the evening.

Only two more days left this week (I took a vacation day on Thursday). I hope everyone had a good Monday.
