Easter Weekend

Hey Everyone! I hope you’re all enjoying the long weekend. I’ve been slacking on the blogging this weekend but it’s a holiday so it all good :P

I’ve also been slacking on the healthy eating this weekend too. My breakfasts and lunches have been great but then dinner rolls around…

Friday

Hubby ordered us Chinese as our Easter celebration. We try not to do much because we don’t want all the chocolate kicking around the house. Plus I’m not a big chocolate eater (I like it just not in large quantities so Matt will just end up eating most of it and so we just avoid buying it all today).

We ordered Egg Rolls, Fried Rice, Sweet and Sour Chicken Balls, Pineapples Chicken and Ginger Beef. I meant to take a picture of our spread but totally forgot (sorry). Not the healthiest meal but it was definitely yummy.

Saturday

We started with oatmeal. I wanted to introduce Matt to the wonderful world of oatmeal with toppings so in the pot: oats, UVAB, flaxmeal and vanilla extract. I just doubled my usual recipe. Toppings were the same as Thursday: 1/2 banana, splash of UCAB, a scoop of White Chocolate Wonderful Peanut Butter and and added a little coconut this time.

Matt really enjoyed it. I’m going to have to try new toppings with him soon. The coconut was a little unnecessary as you couldn’t really taste it and it just added calories.

Afterwards we decided to get out and enjoy the beautiful weather we were having (plus 18 in Halifax yesterday) and go for a walk downtown. If you know Halifax, we started just past the superstore and walked down past Pier 21, through the dockyards, up and around Point Pleasant Park and back. Overall, we figured it was about 6 km.

We also stopped at the park to take a few pictures and look at the old canon (I swear I have been living in this city my entire life and didn’t know it was there – how sad).

After we got home I made myself a green smoothie. In the blender: 2 huge handfuls of spinach, 1 banana, 2 tsp of chia seeds, 1 cup of UVAB and ice.

Oh, green monsters how I have missed you!!! I haven’t had a green smoothie in a while and I love them when they are bright green! They give me so much energy.

For dinner we heading over the Matt’s parents to celebrate my birthday (it was a few weeks late but we haven’t been able to get there yet).

I had a bunch of veggies (carrots, broccoli, snow peas and cucumber), two slices of pizza and a piece of birthday cake. I probably would have been ok until the cake. It was full of icing and very sugary and it just kinda made me sick afterwards. I really need to stop eating store bought birthday cake. It has been having this effect on my lately and I don’t know why I continue to eat it.

Today

Breakfast: 2 eggs with some cheese, red pepper flakes, and fresh ground pepper, along with 1/2 a red pear and a few strawberries.

Then we went for another walk (plus 20 today). This time just around our area. It equalled out to about 4.5 km.

After we got back I had to run to shoppers to pick up my sister a birthday card so I also stopped at subway and starbucks.

We are now heading to my mom’s for my sister’s birthday/Easter celebration. We’re having ham, potatoes, salad and some kind of veggies. My goal for tonight is to eat lots of salad/veggies and a little ham/potato and avoid birthday cake. I felt gross yesterday so I’m not going to put myself through that again.

Update: I’m home from Easter Dinner and I think I did pretty well. I filled up on pre-dinner veggies and had lots of salad and a little ham/potatoes. I did have very small slice of cake though. My sister and mom would have been very upset if not. Feeling good about my dinner choices.
